I was just researching this myself the other day after a frustrating search at at the huge Asian grocery near me turned up only products that were horseradish, mustard, or worse, blue food coloring, sorbitol, and GMO corn oil (looks like they must have to tell you if it's GMO on Japanese packaging). I'm jealous that you have a source for fresh wasabi- best I could do is ship from Oregon in a larger quantity than I would want. I hope some day I'll be able to buy this fresh here in Washington.

I just made this with (of course) some adjustments regarding what I had around. I'm about to do it again. Since I have these ramps from the forest with the greens still on them, I sort of guessed at what is 2 lbs of bulbs. It came out to about three cups of small ones. Is that about right, or would you suggest I use more.

Thanks for the guidance though. This is flat good. Better than a six oz jar of onion garlic jar that usually costs me around $7 plus shipping.

Appreciate any other ideas. I have about 20 lbs of them left, but I'm going through them quickly.

You could use any good quality, full-flavored Spanish olive oil with success. I was skeptical of the smoked olive oil at first, but it is wonderful. The quality of the olive oil is excellent, and the infusion of real smoke does add remarkable flavor. Highly recommended if you can find it!

Thank you! As you have probably guessed, we like recipes that are fun, delicious and uncomplicated. I (and my waistline) can personally guarantee that every single one has been strenuously taste-tested!
